Tequilla Lime Shrimp with Tomatillo Sauce

September is a great time to grill out, the weather has cooled off so you need to hang on to your last availible nights to grill! I like to make these shrimp as an appetizer or an accompaniment to steaks. Buy the big tiger prawns, they will grill better. These are always a big hit!

Thread the shrimp (3-4) on the skewers lay in a shallow bowl

Prepare marinade, whisk together lime juice, tequila, garlic, shallots, cumin, salt & pepper to taste. Slowly add olive oil.

Cook on medium heat grill for 4 minutes each side

Tomatillo Sauce

¾ cup of chicken stock
1 small onion chopped
1-2 jalapenos, seeded, finely chopped
2 medium garlic cloves minced

¼ teaspoon ground cumin
1 tablespoon fresh lemon juice
Salt
In a large skillet over medium heat bring chicken stock to boil, add onion cook for 5 minutes.

This sauce is spicy; if it is too spicy you can mix a little sour cream into it.
