Canadian Christmas Sweet Potatoes

While preparing Christmas dinner, my mom was baking the sweet potatoes. I told her we could mash them & they would be yummier. My sister & her hubby live in Canada & they brought this amazing maple syrup, so I decided to make up a new sweet potato recipe. This was a big hit.

5 sweet potatoes roasted at 325 for 1 hour, rubbed with olive oil & salt wrapped in foil.
1/4 cup maple syrup
salt & pepper
1 tsp pumpkin spice
1/3 stick butter
1/4 cup light sour cream

Peel sweet potatoes, place all ingredients in a large bowl, whip with electric mixer. Serve hot.
