Chicken Tacos

As much as I love Italian food, Matt loves Mexican food. I think when we went to Cabo he was in heaven being able to eat tacos every day. We like to make tacos at home but rather than the traditional American ground beef variety, we like chicken. This is a great quick dinner & makes for great leftovers.

Ingredients:
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1 pound skinless, boneless chicken breasts
Cooking spray
12 (6-inch) white corn tortillas

Garnish: (Tacos are all about the garnish)
thinly sliced lettuce
shredded reduced-fat mexican cheese
Low-fat sour cream
Guacamole
salsa
chopped tomatoes
sauteed onions
We could really go crazy right here but you get the point!

Prepare grill.
Combine first 4 ingredients in a small bowl; rub spice mixture over chicken.
Place chicken on grill rack coated with cooking spray; grill 10 minutes on each side or until done. Let stand 5 minutes; chop.
Heat tortillas & set up your taco bar.

I chose this picture for Mexican food because there are traditional celebration flags. We are using the white ones for our wedding!!! :)
