
My sister is here visiting Matt & me. Her husband is off in Australia playing baseball with the Canadian Olympic Team. (Everybody cheer in your head & think positive!)
We were talking about how when we were kids in Texas, our school served chicken fried steak, chicken fried chicken, steak fingers (which is chicken fried steak in strips) & chicken with biscuits for lunch. We decided that we should make chicken & biscuits for our dinner tonight.
vegetables (you can use corn, peas, broccoli) about 1 1/2 cups
2 1/2 cups cooked chicken, cubed or shredded (we are going to use a rotisserie chicken)
1 can condensed cream of chicken soup
3/4 cup milk
1 1/2 cups cheddar cheese, shredded
Biscuits:
1 1/2 cups biscuit mix
2/3 cup milk
1 can French-fried onions
In a bowl, combine the vegetables, chicken, soup, milk and 1 cup cheese. Pour into an ungreased 13×9x2 inch baking dish. Cover and bake at 400 degrees F for 15 minutes.
In another bowl, combine the biscuit mix and milk. Drop batter by tablespoonfuls onto the chicken mixture. Bake, uncovered for another 2o minutes or until the biscuits are brown. Top with the onions and cheese. Bake about 5 minutes longer until the cheese is melted.
