Turkey Panino


Well it's tax day & you might need a simple yet comforting dinner. Turkey Paninos are just the thing. Paninos are popular in the cafes of Venice, sort of like a luxury grilled cheese!
*while this picture is actually Pisa, it's in Italy so close enough! That is my dad (complete with a mustache, my mom, moi & Beckie in 1982)

You can vary these ingredients based on you taste.
8 ounces cheese, I like Havarti, Gruyere, or Muenster
2 Tablespoons butter at room temperature
2 Tablespoons Dijon Mustard, I like the course country type
1 garlic clove
Turkey
Slices of Bread (get good bread from the bakery like sour dough or French) remove the crust
olive oil for the pan

In your food processor blend the cheese, butter, garlic and mustard. Heat enough olive oil to coat your fry pan. Spread a layer of the cheese mixture on two slices of bread & add the turkey. Place in your fry pan with the plain side down. Cook like a grilled cheese. Serve with my fake it tomato soup! Enjoy.

They published "gourmet" grilled cheese in the Trib today. Your panino would have been a good edition.
