Judy's Buffalo Chicken Dip

This recipe came from Uncle Mike's sister Judy.  Uncle Mike thought this would be a great Super Bowl snack while everyone is cheering for the Cardinals!

1/3 cup Franks or Texas Pete's Buffalo wing sauce (Judy prefers Texas Pete's)
1 cup reduced fat ranch or blue cheese dressing
12 ounces softened reduced fat cream cheese
2 cups 2% shredded cheddar cheese
1 pound shredded chicken

Mix the dressing, cream cheese and hot sauce.  Stir in the cheese and chicken.  Place in a baking dish sprayed with Pam.  Bake at 375 for 30 minutes.  Serve with baked Tostitos, crackers and celery sticks.

Crab Dip

On Tuesday Megan and ran over to Penzey's at lunch. Two of my favorite things to buy at Penzey's are the dip mixes. The chip and dip mix is like a fancy French Onion dip. (I like to have this around to whip up quick snacks) My other favorite is the Horseradish Dip mix. Typically I make this up to serve with a beef tenderloin or on roast beef sandwiches. However today in the store I was given a new dip recipe, I have adapted this a little to make it lower calorie and fit ingredients I thought would be on hand. (If you do make it into Penzey's one of my favorite little gifts for the neighbors at Christmas is to write out a favorite recipe on a pretty card & give them a bottle of the main spice with it.)
1 tablespoon Horseradish Dip Mix
2 tablespoons water
8 ounces low fat cream cheese at room temperature
1/3 cup low fat sour cream
1 tablespoons chili powder
4 ounces crab meat
Mix the dip powder with the water. Let stand 5 minutes. Mix the cream cheese and sour cream together. Add the chili powder to the horseradish mix, blend into cream cheese. Fold in crab meat. Serve with toasted pita chips.

Blue Cheese Dip

If you are lucky enough to be invited to dinner for Thanksgiving you should offer to bring something. If you aren't a cook, here is a simple recipe you can whip up to bring over. Macy's has another gorgeous serving piece on sale if you need a dish for your Blue Cheese Dip. I have always liked this Towle Mother of Pearl chip and dip set.
4 ounces softened cream cheese, low fat is okay
1 cup low fat sour cream
4 ounces crumbled blue cheese
2 tablespoons chopped chives
1/2 a teaspoon pepper
With an electric mixer or food processor beat the cream cheese for 2 minutes, add the sour cream beat another minute, add blue cheese beat another minute. Stir in the pepper and chives. Pour dip into the center bowl, surround with chips, carrot and celery sticks.
